Baked chicken bites with lemon and chili are such a zesty combination.

Serves 6

Ingredients:

2 pounds chicken breasts, boned and skinned

3 lemons, juiced

¼ cup olive oil

3 cloves garlic, crushed

1 small onion, grated

2 tsp. chili powder (to taste)

Salt and pepper

Directions:

Mix together the garlic, lemon juice and the olive oil.

Add the onion and chili powder. Set aside.

Cut the chicken breast up into 1 inch cubes.

Place in the lemon marinade and refrigerate for 1 hour.

Pre-heat the oven to 350°F.

Remove the chicken from the marinade and place in an ovenproof dish in a single layer.

Bake for 15 – 20 minutes until cooked, basting with extra marinade half way through the cooking time.

Remove from the oven, sprinkle with salt and pepper and serve.
